I snapped up a whole tray of over ripe banana’s at the greengrocers for just 92p yesterday!
After giving some to a neighbour, some to the hens, and having 2 in my morning smoothie, I was still left with 19! Out came the cookbook, for this old favourite.
Firstly, please don’t be put off by the virtuous (dull) sounding title of this recipe. Due to all the super sweet fruit, they are sweet, flavoursome and feel VERY decadent even though they are lacking in most things you’d normally find in a traybake. Next time your banana’s go brown, just try this one, even if you are allergy free. I promise you won’t regret it!
3 large bananas
1 cup chopped dates
2 cups oats (recipe specifies rolled oats, but live dangerously & use whatever you have)
1/3 cup cooking oil
1 tsp vanilla extract
(If you are baffled by the American cup measurements, just use a coffee mug)
Preheat oven to 180c/Gas 4
Mash the bananas in a bowl (get your hands in there, it’s strangely satisfying)
Stir in everything else (I was out of vanilla extract so omitted it. Not sure you can actually taste the difference anyway)
Mix it all up and let stand for about 15 minutes.
Next the recipe (pulled from a magazine years ago so sorry, can’t credit it) says to drop desert spoonfuls onto a baking tray lined with greaseproof paper. Personally, I haven’t had much luck in the past making these as cookies so I always make them in a greased, square cake pan as a traybake. Try whichever way you fancy.
Bake for 20 minutes or until brown.
And then enjoy a little piece of damn healthy heaven :)
